Wow you know a lot of English majors. You make a great point - it can lead a multitude of directions.
I know a few English majors too. They are:
1) Executive Director of a non-profit
2) College professor
3) Marriage and family therapist
4) Grantwriter, national agency
5) School librarian
6) Technical writer, widget manufacturing trade association
8) Real estate attorney
9) High school teacher
